IN MY KITCHEN - MARCH 2025



I'm in my Florida condo for the winter season. I cook about 4 nights a week, and we eat out about 3 nights a week. It seems to be the way everyone socializes (and puts on weight). Of course the weather is warm, so it makes it easy to be out and about and even walk to some of the restaurants.   

I'm joining Sherry and other bloggers for In My Kitchen monthly blog share hosted by Sherry's Pickings where any blogger can join in! 

This is what has been going on in my kitchen this past month. 



Roses !! They have been my newest items this past month. 
We have a "flower man" who sells fresh beautiful roses every Friday directly from his van that he picks up directly from the airport flown in from Ecquador.

 The cost is only $20 for 2 dozen gorgeous roses (you must buy 2 dozen). I keep a dozen for me and give a dozen away!





  • One week I presented a dozen of these beautiful roses to new neighbors that just moved in 
  • one week we were invited for dinner and I brought a dozen roses 
  • one week I shared with a single older woman for Valentine's Day! 
  • It's been fun and of course I have still have dozen beautiful roses for myself.


Spaghetti squash  has become a staple on my menu. It's fairly reasonable in Florida. I make it once weekly in the air-fryer  recipe post on spaghetti squash link. It's good for two meals for me.  I top it with a little vegan cheese, sautéed mushrooms and or tofu.

Loaded Quinoa Salad
We always enjoy a quinoa salad with the works: tomato, scallions, artichoke hearts, spinach, chickpeas. With a bowl of soup, it's a wonderful plant-based and gluten-free meal. 



This black fig jam is from a specialty store. My husband is into jam. 




Green Beans and Tomatoes: 
I made some green beans in the Instant Pot on zero minutes, released steam, and gave them an ice bath to keep them nice and green. 


Roses again !!



Soup's On 
Regardless of the weather (unless it's extremely humid an extremely hot), I love soup and make some soup every week. We enjoyed black bean topped with avocado and a squeeze of lemon, leek and chickpea soup, and Red lentil Vegetable Soup . All plant-based hearty high protein soups! Other than soup, flowers, and jam- not much new in February In My Kitchen.
