7 Easy Sweet Potato Recipes

a brown paper bag filled with sweet potatoes

Do you enjoy a good sweet potato? I do and I often steam a batch of 4 or 5 them at one time in my Instant Pot to eat throughout the week. I eat the sweet potatoes as needed- sometimes plain or with toppings or adding sweet potato to a variety of recipes. I'm sharing seven of my favorite recipes.

Why It's Worth Eating Sweet Potatoes
Sweet potatoes are delicious, satisfying, and provide a wide range of health benefits including much needed fiber,  protective antioxidants, and a good supply of valuable vitamins and minerals.

Let's take a closer look at the nutritional benefits of a whole sweet potato:

1. Nutrient Powerhouse: Sweet potatoes are rich in vitamins A, C, and B6, essential for immune function, skin health, and overall well-being.

2. High in Fiber: With a good dose of fiber, sweet potatoes help promote digestive health and may help keep you feeling full longer.

3. Antioxidant-Rich: They boast protective antioxidants such as beta-carotene, which studies show may reduce the risk of some chronic diseases.

4. Versatile and Flavorful: Sweet potatoes can be used in a variety of dishes, such as chili, soup, salads, or casseroles, making them a kitchen staple.

I'm sharing 7 creative ideas using uncooked or cooked sweet potatoes in your menus.

  4. I love sweet potatoes and eat them often! I like to bake them, roast them, add them to soups and chili. I like to roast them alongside peppers and onions and toss in a can of black beans at the end for easy quesadillas or tacos. I haven't thought of steaming them in my Instant Pot, but that's a great idea!

In re your comment on my blog, I would encourage you to make beans in the slow cooker. I also make pinto beans in the slow cooker and they are so good. Plus, the house is scented with the most heady fragrance.
