- Salads: Add cooked and chilled sweet potato chunks to tossed salads
- Snack: Mashed with bananas, cinnamon, and walnuts for a snack
- Soup: 5 minute spicy leftover sweet potato soup
- Chili: sweet potato chili
- Baked Fries: sweet potato fries in the air-fryer or leftover sweets to just crisp them up quickly in the air-fryer
- Potato Salad: Fresh peach and sweet potato salad
- Sweet potato air-fry
- Sweet potato casserole
- Loaded Sweet Potato: Grab and go lunch: steamed or baked sweet potato loaded with beans, corn, cilantro, or diced tomatoes.

- Bake a sweet potato, split it open, scoop out a little and fill generously with colorful healthy toppings such as: black beans, corn, diced tomatoes, avocado slices, and chopped fresh cilantro.
- Drizzle with a creamy vegan dressing, such as my tahini dressing, my recipe for homemade vegan "cheese sauce," or Sriracha Sauce.
- Scatter a few ingredients around the sweet potato such as extra avocado slices, walnut halves, a lime wedge, or a small bowl of spicy salsa.

DeleteI love sweet potatoes and eat them often! I like to bake them, roast them, add them to soups and chili. I like to roast them alongside peppers and onions and toss in a can of black beans at the end for easy quesadillas or tacos. I haven't thought of steaming them in my Instant Pot, but that's a great idea!

DeleteI don’t know why, but I never think to make sweet potatoes at any time of the year other than fall. All of these recipes look so good, the fries in particular.
ReplyDeleteIn re your comment on my blog, I would encourage you to make beans in the slow cooker. I also make pinto beans in the slow cooker and they are so good. Plus, the house is scented with the most heady fragrance.
