Chickpeas are a great source of plant-based protein and are filling and delicious. They happen to be my favorite legume, and I like to use them in many of my recipes.
I started publishing my blog over 12 years ago, so many of my recipes may have been seen and forgotten or never seen by my current readers.
I decided to rummage through some of my older chickpea recipes and re-share them in one post.
Chickpeas are used in recipes from countries all over the world. They are versatile, inexpensive, low in fat, high in protein and fiber and are satisfying.

Creamy Low-fat Homemade Hummus Recipe Link (oil-free)
There is nothing like the taste of homemade when it comes to hummus. This is much better than store bought.

I love this simple salad using quinoa as a base. Very tasty, very easy and very healthy.
Spanish Chickpea Soup -recipe link
A lovely tomato based soup to warm you up and fill you up on a chilly day. Lots of vegetables and lots of flavor. The recipe called for oil but I sautéed in water or broth and it tastes great.
Waldorf Chickpea Salad with Honey Mustard Dressing (recipe link)
This sweet tangy salad is delicious. If you love Waldorf salad, this version is a winner.
Vegetable Pakoras made with chickpea flour (available in the supermarket).- This is a really easy recipe and is baked not fried. Chickpea flour is sold by "Bobs Red Mills" in most supermarkets or other brands at Indian food stores. These are a great appetizer for company or as a side any night of the week.
Switch the quinoa with chickpeas in this salad that has mango, cucumbers, sprouts, tomatoes, and avocado. Nice flavors in this platter. Serves 2

Meat production takes a BIG toll on the environment. A BIG toll!
If everyone would cut back on eating meat, it would cut back on deforestation which continues because it is necessary for the enormous demands of cattle grazing and has huge ramifications on our environment. In addition, animals such as cows and sheep give off huge amount of methane gas emissions which is a major contributor to global warming.
Of course cutting down or eliminating meat might be much better for your heart health as well!
