It's summer, it's hot, and I want easy light meals.
One of our easy favorites? It looks like a salad but it is actually
Sushi in a bowl -
Why a bowl of sushi verses sushi rolls?
There are many ways to make a sushi bowl using a variety of ingredients over rice. It's a matter of what you like- that's what you use.
I like to try to roll it but it takes too much time and effort |
Instead, I simply assemble many of the sushi ingredients and eat them in a bowl. You get all the taste and flavor without the hard work!
It is delicious topped with some gluten-free soy or tamari sauce, gluten-free peanut sauce or even some salad dressing of choice.(There is rice beneath the vegetables in the sushi bowl photo)

Make It Your Way
To the basic bowl, I sometimes add some of the following :
- Tofu
- Avocado slices
- Asian spices
- Sesame seeds
- Fresh ginger
- Edamame
- Pickled radish
- Cucumber slices
- Nuts or seeds
- Sliced red cabbage
- Shredded carrots (I always use them)
- Scallions
- Red onion
- Red or yellow pepper slices
- Cooked sweet potato cubes
- Freshly squeezed lime
- Cilantro
- Basil
- Dandelion greens
- Baby spinach
- Mushrooms
The base in always brown or white rice and we always enjoy it with a ginger soy dressing or another dressing. It's one of our favorite summer meals. These sushi bowls are colorful, gluten-free, and healthy.
I recently was reminded of making sushi bowls when I read a post for vegan sushi in a bowl on a wonderful blog that I follow regularly called Simple Gluten Free Kitchen (link to her site) published by Balvinder. Balvinder's post motivated me to share my sushi bowls too.
These are familiar as we eat salads this time of year. Love this post!

Yum!!! This is definitely my kind of meal. I'd add seared tuna to mine :)
ReplyDeleteAt least some of the sushi restaurants where I've eaten offer a bowl of rice topped with sushi ingredients, especially the fish which is traditional in sushi and sashimi. Your list of ingredients is interesting, reflecting your vegan choice.
ReplyDeletebest, mae at maefood.blogspot.com
