Baby Bok Choy with Ginger and Walnuts

Baby bok choy is easy to find, easy to cook, and is tender and delicious. Candied ginger, chopped walnuts, and garlic add a beautiful flavor in this simple recipe that tastes exotic and looks creative. 

Bok Choy is a light and healthy vegetable that you may want to include in your diet.

Bok Choy can be a delicious side dish for any week night or for when entertaining. I was introduced to this tasty easy dish at my friend Lida's house. Lida is a fabulous cook and served this as part of an afternoon lunch for four along with soup, salad, and a vegan entree.

 I was able to find the smaller baby bok choy in Trader Joe's, or  I'm sure they are available in Asian markets. This simple vegetable is highly nutritious, containing over 50 valuable antioxidants and lots of Vitamin A. If you are looking for rejuvenating health providing foods, cabbage and Bok Choy (in the cabbage family) are great choices.

This low calorie vegetable side dish is made by slicing the baby Bok Choy in half lengthwise.  I like to lay the sliced Bok Choy in a rectangular pyrex casserole, sprinkle the seasoning mixture over them and bake them in a preheated 350 oven for 10-12 minutes.

It's a perfect recipe to remember if your guests are vegetarian, vegan, or gluten-free. (just be sure to use gluten-free soy sauce)

Prep Time: 5 minutes
Cook Time: 10-12 minutes in Oven
Serves: 4-6

Ingredients: 
 
4 baby bok choy, washed and sliced in half lengthwise
1/2 cup of chopped raw walnuts 
1/3 cup of chopped candied ginger ( or 2 tablespoons of freshly grated ginger) 
2 tablespoons of pressed or finely minced garlic 
1 cup of vegetable broth
Optional: 1/4 cup of gluten free soy sauce 

Directions:

Toast the walnuts with the candied (or regular ginger) and garlic in a skillet for about 3 minutes, stirring continuously and set aside.
Lay the sliced bok choy in a large rectangular pyrex casserole, drizzle with the toasted walnut mixture, pour the vegetable broth and gluten free soy sauce over the bok choy and bake in a pre-heated oven (350) for 10-12 minutes.

  8. I love bok choy, especially with fresh ginger. I can't use candied ginger because of the sugar. So at least I can adapt this.

  14. I've never had bok choy; you make it look and sound very good! And I love the picture of the ginger -- admittedly, because it reminds of candy! The husband went through a fresh ginger phase, and we used to joke that it looked like baby feet.

  17. this sounds really good and is so different from the usual sides! Question, in the recipe you say to place the steamed bok choy into the baking dish, but you never said how to steam the bok choy?
