But no more!! I found a solution.
The Instant Pot solves that problem.
Did you know that winter squashes such as acorn, carnival, or butternut squash can be cooked whole in the Instant Pot.
No need to cut, peel, pierce a butternut squash, acorn squash, delicate squash before cooking ( I do wash it well) .
Sometimes simple eating is the healthiest and best. Butternut squash is full of wonderful vitamins and antioxidants and tastes sweet and delicious. Kids and adults alike usually love it.
A simple steamed winter squash (acorn, butternut, carnival) makes the perfect health giving side dish for any meal. I have even cut cooked cubes of butternut and added to my salads.
One of my favorite hearty salads is my anti-inflammatory salad (link to recipe) which contains cubes of butternut squash (cooked) or sweet potato (cooked). It's a complete meal that I make in a bowl or a mason jar.
If I haven't mentioned it lately, I LOVE๐ my Instant Pot. It definitely makes cooking and clean up easier for me.
I own an 8 quart and 6 quart Instant Pots and use them both frequently. Which size Instant Pot do you need to cook winter squash? Either on is fine as long as your squash does not go over the line.

Two Simple Steps- Select your squash and Add to Instant Pot
- Purchase a small or medium squash if you are using the 6 quart Instant Pot. You can get a medium- large squash if you are using the 8 quart Instant Pot.
- Once you have your winter squash picked out the magic can begin. Simply insert the steamer basket that came with your Instant Pot into the Instant Pot liner, add water and set to 25 minutes (see specific directions below). Your squash will be tender, easy to handle, and delicious.
Try a variety of winter squashes
Acorn Squash - Pressure cook 15 minutes +10 minutes slow release
Butternut Squash- Pressure cook 25 minutes +10 minutes slow release
Carnival Squash -Pressure cook 15 minutes +10 minutes slow release
Butternut squash
Ingredients:
1.5 cups of water
1 medium butternut squash, washed
Instructions:
Place the water in the bottom of the insert liner of the Instant Pot. Insert your steamer basket and then place the squash in the steamer basket (making sure that the squash does not exceed the guidance line).
Secure the lid and set the pressure cooker for 25 minutes. When done, allow to sit for 10 minutes, then release the remaining steam manually according to the manufacturers directions. When all steam is released, remove the lid and then carefully remove the squash from the Instant Pot and place on a plate (be careful as the squash will be very hot). Using a large sharp knife, easily cut the squash in half lengthwise, remove the seeds and enjoy.
