Got potatoes?
If you like potatoes, you'll love these delicious roasted mashed potato poppers. They are really easy to make and are baked, not fried.
They are fun to serve as a side dish or even as an appetizer! Perfect for all kind of eaters because they are gluten free, dairy free, plant-based, etc. They can be made in the air-fryer or the oven.
I saw the original recipe on the Medical Medium Instagram site.
His recipe was for jalapeño potato poppers.
As soon as I saw them, I knew I would want to try them, but since, I do not like anything spicy, I decided to make them without the kick!
Basically you start with peeling, cooking, and mashing the potatoes. Add seasoning and jalapeños to mashed potatoes and then allow them to cool somewhat. Then you take small amounts and roll them into balls which are then rolled in paprika. They are then baked till crispy.
My adaptations:
- I made mine in the air-fryer,
- switched up the seasoning to suit my taste
- left out the jalapeños
We are fans of cumin seeds which I sprinkled (1/4 cup) into the mashed potatoes. I used his suggestion for garlic powder, onion powder, and salt as well. Next time, I might add some chopped green onion to the mashed potatoes too or instead of cumin seeds, perhaps za'atar? ??
What would you add to the mashed potatoes before air-frying or baking them?
Sweet Potato or Yam
I also think I could make this recipe using sweet potatoes or yams and adjust the seasoning. In the past I've made mashed sweet potatoes with vanilla and nut milk. Perhaps omit the nut milk and just add some vanilla to the mashed sweet potato and then roll in cinnamon. Just a thought!
The original recipe : jalapeño potato poppers
My adaptations:
Ingredients:
2 pounds of yellow god potatoes, peeled and quartered
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 cup of cumin seeds
1 tsp of sea salt
optional: 1/2 cup chopped green onion
Directions:
Steam potatoes ( I used the Instant Pot and set for 7 minutes to pressure cook and then released steam)
When all steam is released from the Instant Pot, mash the potatoes with a potato masher.
Add garlic powder, onion powder, cumin seeds, sea salt, and chopped green onion.
Shape into balls, roll in paprika and bake in the air-fryer for 20 minutes or a 350 oven.
My Notes:
Surprisingly the mashed potatoes were easy to work with and did not require flour or any binding to make the ball shape.
What's the difference between sweet potato and yam? The poppers look awesome!
ReplyDeleteThe jalapeno potato poppers sound really good. I do not care for sweet potatoes but love Japanese or purple sweet potatoes. They are healthier than regular potatoes too.
