5 Easy Autumn Vegetable Recipes

It is official! It's Autumn and the farmer's markets will soon be overflowing with many autumn vegetables that thrive in the cooler weather up right up until the first good frost. 

What are some of these vegetables and fall recipes to make?

1. Baby Brussels Sprout Soup (recipe link)- A quick an easy 12 minute soup that I make using frozen baby Brussel Sprouts. Hearty and delicious.

2. Butternut Squash Red Lentil Soup (recipe link). - I use a shortcut to make this one of the easiest soups to prep and cook. It's absolutely one of my favorites with lots of protein, fiber, nutrients and a satisfying delicious taste.

3. Homemade Apple Pie Filling In A Baked Acorn Squash (recipe link)- Sweet and flavorful, this simple baked squash recipe would be a wonderful side dish for Thanksgiving!

  1. Your blog is ablaze with autumn! The homemade apple pie filling in a baked acorn squash looks delicious, just like desert. I imagine it's a big hit. The pic of the veggies with the basket is beyond beautiful, and the ones of the cored squash with the heart cutting board and the mums are so warm and homey.

    You're half right when you say it's getting a little cooler (re your comment). But then some days, like today, it's hot and sunny. Still, I'm sure it'll all even out and we'll be layering up before we know it. 🍁

  9. Happy fall! I could have soup almost every day. I love soup. I stuff my acorn squash with dried fruit, butter, cinnamon, and a little brown sugar, but I like the idea of using apple pie filling. YUM.

  11. Butternut squash is good but I’ve become hooked on delicata squash because you can roast it with the skin on and it’s 100% edible. Such easy prep, but still an entirely fresh food. Several of your recipes would work with it.

    1. Brussels sprout soup is really unusual but if we think about it, they are similar to cabbage. So why not. This soup is easy and delicious.
