Refreshing Creamy Strawberry Soup- perfect on a hot humid day when you've got strawberries and need to refresh. Enjoy it as a nutritious snack or a starter for a meal. Vegan, Gluten-Free, Oil-Free
2. Mango Peach Salsa Salad- wonderful flavors in this mango peach summer salsa. Delicious with chips as an appetizer, a side with any entree, a topping etc. Vegan/gluten-free
3. Portobello Mushroom Burgers- Got Vegetarians at BBQ Time? These tasty burgers are perfect for summer get togethers. They can be assembled and then sautéed in a skillet for 5 minutes. Juicy, flavorful, and meaty tasting. Delicious on a gluten-free roll. Vegan/gluten-free
CantOne of my favorite summer salads with crunchy corn kernels right off the Cobb and interesting and fabulous flavors. Freshly cut corn off the cob (uncooked), Kirby cucumber, black olives, red onion, etc. make this a refreshing satisfying salad everyone will enjoy. Travels well and is a great dish for a pot luck. Meets vegan and gluten-free standards.
Vegan/GF/ Oil-Free option-
A delicious way to enjoy summer zucchini. Light and flavorful- Great dinner starter in the summer.
A refreshing mojito made with rum, kiwi, mint, syrup and ice. Perfect for a hot summer evening with friends! Enjoy with some freshly chopped salsa and baked (GF) chips and get the party going!!
7. Cauliflower Rice Fiesta-a delicious blend of health-giving vegetables. Cauliflower rice is low carb and low calorie, yet surprisingly tastes like rice. It is exceptionally flavorful in this recipe with olives, chopped summer tomatoes, and freshly squeezed lime juice. I use bags of frozen cauliflower rice for convenience. I usually get them at Trader Joe's or Whole Foods. Reasonable and organic.
8. Rice with avocado, chickpeas, sesame seeds, avocado and spices.- a perfect vegan entree. Quick and easy to make for any weeknight. Use white or brown rice! Eat with soup or salad! Make a pot of rice and just top with canned chickpeas, avocado, and diced tomatoes etc. Really delicious.
9. Chia Choclate Pudding Dessert- This quick and easy 1 minute dessert has a rich chocolate flavor yet is free of added sugar. Chia seeds provide fiber and health giving nutrients. A wonderful healthy treat for any weeknight! Both kids and adults will enjoy!
10. Quinoa tabouleh salad - lots of fresh mint, tomatoes, cucumber, and fresh lime juice in a quinoa base. This light and delicious summer side salad is easy to make and provides fiber and protein. Perfect to boost your healthy nutrients.

ReplyDeleteI really enjoyed seeing all of these beautiful pictures together! The strawberry soup is my favorite -- it's so pink and pretty, like something Strawberry Shortcake would eat. Also, thanks for sharing your story (in your comment) about your son's PC prowess during Y2K. What a whiz! That sounds like it was one exciting gig; you must be very proud. :)

ReplyDeletenumber 4 salad looks great. i like the strawberry soup idea but i'd leave out the sugar :) Reminds me of a cold cherry soup i've made before.
