Spicy Orange Sauce in A Stuffed Baked Potato

Sauces are the spice of life and they taste really good on steamed broccoli, baked potatoes, green beans, cauliflower, veggie burgers, or just about anything. I think you will love the low fat sauce I made. 



Make this oil-free, low-fat sauce in advance in a blender or NutriBullet and it will last in the refrigerator about  4 days. Then use it as needed.

It kind of looks like a vegan cheese sauce, but it has a taste all of its own- which is delicious.

It's easy to make and is healthy and tasty. 

I used this delicious sauce to stuff a baked potato along with cooked broccoli and black bean sauce. 

A perfect meal with soup, additional broccoli, and a salad.

I stuffed my baked potato with broccoli, black bean sauce, and spicy orange sauce.

Both of those sauces are very low fat and oil-free.  

The black bean dip is an organic sauce I purchased already prepared from Whole Food Market (365 brand) and has zero fat and oil. We really like it. 




The spicy orange sauce is a homemade recipe that I have been making for the last few months. 

I use a cup of jarred organic salsa (I've gotten organic chunky salsa at Aldi's or Whole Foods market). The salsa's come in mild, medium, or hot. (oil-free). 

Recipe For Spicy Homemade Orange Sauce 


Ingredients: 

1/2 cup of steamed sliced carrots 
1/2 cup of steamed chopped potato (peeled)
1 cup of organic chunky salsa
1/3 cup of raw cashews (soaked for 2 hours or more) and drained
1/4 cup of nut milk + 2 tablespoons more if needed 

Directions:
Add the steamed carrots, steamed potatoes, salsa, drained cashews, and 1/4 cup of nut milk to a NutriBullet or blender. Whiz/blend until creamy, smooth, and the cashews are well blended. Store in an empty jar or glass container. Use as needed.

Notes: 
1. This low fat sauce meets gluten-free, oil-free, and vegan standards.
2. It is also kosher-parve

4. I steam 2 sliced carrots and 6 chopped potatoes together in the Instant Pot- ( sliced and chopped, add to Instant Pot and set for 6  minutes. Release steam manually according to manufacturers directions when done.
I make a large batch and use the carrots and potatoes for a side dish or I make mashed potatoes with carrots- both delicious.

    1. Marie- It is a simple sauce that is really tasty on anything. Make sure that your cashews are raw - toasted will not work..
