Peach Caprese Salad with Cashew Basil Dressing- Vegan

Seasonal fresh farm produce such sweet peaches, red juicy tomatoes, and aromatic basil are the perfect fixings for this beautiful summer peach caprese salad with a delicious creamy plant-based dressing.

One bite of a fresh sun ripened peach right off the tree, and you know you can't compare it to anything you buy in the store. The sun kissed tomatoes are amazing as well and the aroma of freshly picked and chopped basil can permeate the entire kitchen.



My local kids and grandkids usually come for dinner (on the deck) every Friday night. With the unbearable heatwave we have been having, salads are what we feel like eating. 


I kept this special appetizer vegan by adding a delicious sweet cashew dressing, but you could easily add mozzarella cheese slices if you eat dairy.



This salad not only tastes wonderful, it makes a beautiful inviting presentation too that can be assembled quickly. 

The cashew basil dressing is sweet, creamy, and delicious!

Ingredients for salad 
3 ripe peaches, sliced
2 large tomatoes, sliced
1 cup of diced red onion
1/4 cup of freshly chopped basil 

3 ingredients Cashew Basil Dressing Recipe (recipe link) + add 1 tablespoon of maple syrup to the basic cream dressing. 


Directions: 
Using a flat plate or platter, arrange the sliced peaches and the sliced tomato alternately until you fill the plate. Sprinkle the diced red onion and chopped basil across the plate. Lightly drizzle the cashew basil dressing over the platter .

    1. I feel the same way Marie, I don't have a garden but I get them from a local farm. There are so many things to make with tomatoes. I love experimenting with the flavors!

    1. the cashew dressing tastes best with something added such as maple syrup for a sweet taste and a tomato sauce for a creamy tomato taste.

    I’m going to try your cashew basil sauce when j get some basil. I have cashews, but my basil died recently. I guess it could not stand the humidity.

    1. Nil, I'm telling you that the cashew sauce mixed with tomato sauce (even ketchup)is delicious. 1 cup sauce, 2 tablespoons of cashew sauce. OR for a sweet sauce add 1 tablespoon of maple syrup per 3/4 cup of cashew sauce and use for fruit.

  9. Those tomatoes sure look good. And the dressing does too. A perfect time for a salad. We have a bit of a long process trying to grow tomatoes in western Canada .... just need the nights to stay warm(er).
