I'm Staying Home !!
(except for grocery shopping)
In addition to staying home and being cautious when I do have to go out to groceries or a morning walk,
I am doing things to try to maintain a healthy lifestyle while I'm primarily shut in..
What does a Vegan eat ?
7:00-8:00 AM- Morning Walk
I get up and walk each morning for an hour.
There are not too many people out at that time, and I am able to get a good walk! The rest of the day, I stay in..
I am lucky I have a balcony (Overlooking the ocean in Florida)
9:00 AM - V-8 Shake
I love this easy blender shake because it tastes great and is made of all fresh raw vegetables.
I buy a large package of organic spinach, a few packages of cherry tomatoes, a bunch or two of celery, fresh garlic, fresh ginger, turmeric powder, a few avocados, a bag of oranges, and some fresh basil.
So far I have been easily able to get all of those items in quantity for at least a week.
I wash everything and make 7 days worth of baggies with the vegetables except for the avocado, orange, and turmeric which I add when I make the shake.. It's delicious!
Lunch: 11:30 AM
Special Salad and Bowl of Soup
I make a salad with cherry tomatoes, canned hearts of palm or jarred artichokes, sliced celery, chick peas, and avocado .
You could eat this over rice or quinoa |
I usually eat some salad with it.
I've also make a big bowl of our family recipe for Middle Eastern (no mayo) vegan potato salad that lasts 5 days in the fridge- I often chop up red cabbage, scallions, and peas to add to the potato salad. A head of red cabbage will last a month in the refrigerator, scallions can actually grow back if you put them in water see the scallion post which gives fresh scallions daily. I am also growing pots of oregano, thyme, parsley and mint in my condo on my coffee table which gets a lot of light. I bought the plants at Whole Foods Market about 3 weeks ago.

Snacks:
I make my easy blender, low calorie, healthy chocolate pudding recipe that calls for cocoa powder and peanut butter powder, which I ordered on Amazon Prime and received it in 2 days, a banana, and a little nut milk. It is low calorie and can be made and cooked in minutes.

I also might eat an apple or some frozen fruit and a little stevia which makes the concoction get icy and delicious. I eat it with a spoon.
Dinner: 5:30 PM
I make a pot or two of soup every week.
I use frozen veggies if I can't get fresh. I freeze cut up onions, peppers, sauteed onions, carrots, sauteed peppers, parsley, cut up lemons etc. so I have plenty of vegetables for soup. I choose from one of my delicious soup recipes found on the blog. In the search bar on the top right, do a search for soup. When it pops up, scroll down to look at the recipes. All vegan All gluten free.
Lentil soup, tomato gazpacho acorn apple, root vegetable, creamy kale and cauliflower, Brussels sprouts Soup, Shitake mushroom,, sweet and sour cabbage soup. You can click o9n the link to get the soup recipe.
In addition to soup, we have rice, quinoa, beans, etc.
During the pandemic vegetables are not always available or sometimes I am hesitant to buy scallions, parsley, even apples because there are still people who want to touch everything despite the pandemic. YUCK!!
I have never had a problem staying home...those are some really delicious vegan recipes that even non vegan would enjoy them!
