Whole Roasted Cauliflower with Tahini Dressing

Whole roasted cauliflower makes a lovely presentation, is easy to make, and tastes amazing. 

It gets nice and crispy on the outside, nice and soft on the inside, and is easy to cut up and serve, even though I like to display it first whole. In addition, I make a simple tahini dressing that I drizzle across the cauliflower or used as a dip for after you cut up the pieces.

Homemade V-8 Shake Immunity Booster

Just in time for St. Patrick's Day, this beautiful spinach shake recipe is quick, green, and healthy. It's my own homemade V-8 shake. When you read the ingredients, you may think it sounds weird (I did), but I assure you it tastes absolutely delicious despite mixing orange juice and vegetables. The question is- "Is this a soup, shake, or a smoothie"?

Steamed Baby Artichokes and Orange Cashew Dressing




The other day I was shopping in a specialty fruit and vegetable market, and I spotted a package of baby artichokes. There were about 16 in the plastic box and it was a product of USA. I wasn't sure how I was going to prepare them, but I thought I would give them a try.

Ginger Beer Mocktail - "Moscow Mule"


My new favorite drink is the Moscow Mule. It's made with non alcoholic ginger beer, vodka, and lime juice. If you don't drink alcohol, you can leave out the vodka and add a splash of club soda or cranberry juice. If you do use vodka, read the label to make sure it is gluten free. Many vodkas are made from grains; some are made from potatoes.

 It also seems traditional to now drink the Moscow Mule in a copper mug. There is a reason that I avoid copper, and I posted an article about it- copper toxicity and depression and anxiety.
