This recipe calls for common ingredients. In fact, it calls for just a few ingredients that most people have on hand. In addition, no mixer is needed- just a large spoon and bowl.
Got ripe bananas that will go bad?
How often do you have ripe bananas that will go bad if you don't use them immediately? This recipe calls for 3 ripe bananas.
Breakfast Quick Bread
Since the ingredients are so healthy, you could feel good eating it for snacks or even breakfast if you leave out the chocolate chips. For breakfast I substitute raisins or dried cranberries.
Consider this recipe a keeper because this is one of those recipes that you will like to keep on hand to make over and over again. Seriously, everyone who tastes it - loves it..
Kids love it too and you can feel good serving them this recipe made from oatmeal and bananas!

Also, it freezes well-So you can keep a loaf in the freezer for when company drops by!
This basic recipe is versatile- if you don't want to use bananas , this recipe will also make zucchini bread, sweet potato bread, pumpkin or even apple cake bread!
Oats need to be certified Gluten Free

Recipe:
Ingredients:
3 ripe bananas, mashed
2 cups of certified gluten free oats
2 eggs, beaten
1/4 cup of maple syrup
1/2 teaspoon of cinnamon
1/2 teaspoon of pumpkin spice ( make your own spice recipe)
1 teaspoon of baking soda
1 teaspoon of baking soda
1 cup of chocolate chips
Directions:
Preheat oven to 350 degrees.
In a mixing bowl and with a large spoon, mix the mashed bananas with the beaten eggs. Add the gluten free oats, cinnamon, pumpkin spice, and baking soda. Mix and then add in the chocolate chips ( or substitute raisins, dried cranberries, chopped walnuts, etc.) till smooth.
Spoon into a greased loaf pan and bake for 20- 25 minutes till toothpick inserts in clean.
***If making a variation, add the almond milk to the wet ingredients first.
After bread cools, keep this moist bread refrigerated.
This recipe looks great, Judee! I love the idea of using all oats and no flour. Hope everyone uses certified gluten-free purity protocol oats if they eat gluten free for medical reasons. Can't wait to make this bread. Will report back. :-)

DeleteThanks, Judee. I'm not sure how familiar some reading are with the "gluten-free" oats issue. Even "certified gluten-free" oats can be sorted oats now--i.e., oats that are "regular" oats that have been mechanically sorted to remove gluten grains. This sorting leaves some gluten grains in the "gluten-free" oats and the testing currently used is often an "averaging" of results, which leads to gluten hot spots, so to speak. That's why purity protocol oats--oats that have been grown in dedicated fields, processed on dedicated equipment, and processed in dedicated facilities are so very important. Then those oats that have been truly gf from start to finish are certified gluten free so there's no doubt that they're safe. So many believe they react to even gluten-free oats but, in reality, they're most likely having a gluten reaction to sorted oats that still contain gluten via "hot spots." Thanks so much for allowing me to explain the true situation. I don't think that the majority of folks in the gf community understand this reality.

Judee, I use GF Harvest at glutenfreeoats.com (they're also available on Amazon). They are a family operation and fully committed. The son in the family, Forrest Smith, is celiac (diagnosed at age 2) and started growing truly gluten-free oats as a high school Future Farmers of America project. Later, more family members were diagnosed with celiac and the project ultimately became the family business. I have been so very impressed with the Smiths and their oats from the moment I learned about them!

This is so delicious!!! I just made it and my family loved it!!! I sprinkled extra cinnamon on the top and added some extra chocolate chips on top too.
