Homemade applesauce is very popular during the celebration of Hanukkah.
It is the perfect topping for the homemade potato latkes (pancakes) which we eat during the holiday to remember the miracle of the oil lamps that lasted for 8 days with just a drop of oil.
Applesauce is fast and easy to make, and it tastes absolutely fabulous, especially when it's warm. This version calls for using both apples and pears which is exceptionally delicious.
It's my friend Paula's recipe which we have enjoyed at her home many times on Hanukkah!
Enjoy the tradition of making potato latkes, homemade applesauce and lighting Hanukkah candles.
Ingredients
8 medium Winesap (or other cooking) apples
1 Bartlett pear
1/2 cup apple juice

1/4 cup water
1-2 tsp. cinnamon
1 teaspoon vanilla ( my addition)
Directions

Peel (I didn't because I used organic fruit) core and cut the fruit into chunks. Combine all ingredients in a large saucepan. Bring to a boil, reduce heat to simmer and cook partially covered for 20 to 25 minutes, until tender
