Chilled soup really hits the spot in this 90 + degree weather!
I love soup, but it was even too hot and humid for me to eat hot soup yesterday. So, I made my quickest and easiest soup ever - Carrot Ginger Soup and then chilled it for dinner. It was really refreshing and delicious.
With some Greek yogurt or sour cream and a little cumin, it was the perfect dinner !
It's not a new recipe , but I had never chilled it before.
I'm amazed how many vegetable soups taste good served hot or chilled.
In the past I've made borsht topped with sour cream, sorrel ( which is like spinach) topped with sour cream, and chilled corn chowder

Recipe
Ingredients:
5 large organic carrots, sliced
6 cups water
1 Tablespoon fresh grated ginger
1/2 cup of coconut milk
optional: add cinnamon to each bowl before serving
Directions:
Place carrots into a sauce pan with 6 cups water and bring to a boil. Reduce heat to medium and allow carrots to cook until soft. Turn off the heat, add grated ginger, and allow to steep for 5 minutes covered. Blend in the blender with coconut milk ..chill in refrigerator for 4 hours or more. Deliciously refreshing on a hot day.

DeleteYay, you're still making soup! I am too.....I made a new on the other day which I will post soon. I still haven't tried making a chilled soup though, but ginger carrot sounds like it would be perfect chilled!
ReplyDeleteI could go for this after the hot day we had here. Love the vibrant color with that swirl of yogurt against it. I've not had many cold savory soups, but I do like chilled strawberry soup for dessert!

ReplyDeleteSounds yummy! I have a ton of carrots (10lbs!) in my fridge right now and I need some recipes to use to use them up. This one is going to the top of my list, it's so hot today too it came at the perfect time!
ReplyDeleteI always think of soups as a wintertime food. When I asked for suggestions on my FB page for dinner, someone suggested chilled cantalope soup. I like the sound of that!
