I remember when I was a kid, everyone used "Bisquick" in their recipes . It was easy to bake with and the results were always crispy and tasty.
Last year, Bisquick came out with a gluten free version. Although I usually don't use mixes or processed products, I was tempted.
I had been reading gluten free bloggers who posted Bisquick gluten free pizza recipes, Bisquick muffin recipes, pies, etc. The recipes looked so easy and yummy. I just had to try at least once that magic box of nostalgia that is now gluten free.
So, I bought a box of Bisquick and it sat on the shelf and sat and sat. I really didn't know what to do with it. Finally, I got out one of my mother's forty year old cookbooks and sure enough there was a recipe for Zucchini Biscuit Quiche made with what else but Bisquick!
I'm sharing the recipe, and it is really good. I made it for brunch and everyone in my family loved it! It was easy to make and just as tasty as I remembered, even tastier!
Next time you are looking for something special for brunch, try this recipe. It's easy to make, absolutely delicious and satisfying . .
Here is the recipe
Ingredients:
1 cup biscuit mix ( or DIY Biquick Mix at Morsels of Life Blog using GF flour)
3 cups zucchini , sliced
1/2 cup fresh parsley, chopped
1 cup organic carrots, sliced
1/4-1/2 cup olive oil
1/2 cup onion, chopped ( I used red onion)
1/2 cup freshly grated Parmesan cheese
4 large eggs, slightly beaten
seasoning to taste
Instructions:
Lightly mix ( do not beat) the biscuit mix, olive oil, and eggs. Add the sauteed vegetables and then the cheese. Mix again lightly. Put into a 9 inch greased pie pan. Bake at 350 about 35 minutes.
Assemble Ingredients
Lightly saute zucchini, onions, and carrots in olive oil spray until somewhat soft |
Mix Vegetables and Cheese Together |
Place cooked vegetables and cheese mixture in a well greased Pyrex or metal pie plate and cover the vegetable mixture with the Bisquick, eggs, and oil mixture. Bake at 350 for about 40 minutes |
Serve by the slice with asparagus and figs
Gluten-free Bisquick ingredients: rice flour, sugar, leavening (baking soda, sodium aluminum phosphate, monocalcium phosphate), modified potato starch, salt, xanthan gum.
Because of the aluminum phosphate in the ingredients, I probably won't buy this mix again . I don't like to use any aluminum products. ** update- I found a recipe where you can make your own Bisquick Mix - just use gluten free flour and aluminum free baking powder-
I will make the recipe again, but I'll try to find a homemade recipe for gluten free biscuit mix. Leave me a comment if you know how to make biscuit mix from scratch.
The Zucchini Biscuit Quiche recipe is submitted to Go Ahead Honey , Its Gluten Free hosted this month by Maggie of She Let Them Eat Cake The month's theme is "Springtime Brunches". If you click on the link, it will take you to this month's gluten free recipes.

Having had a lot of friends who had to eat gluten free, it's nice to see the big companies starting to make more gluten free mixes. It's just good to be able to enjoy a nostalgic food once in a while, regardless of dietary restrictions! I hope you are able to find a homemade version of the bisquick soon!

how to be fabulous
Thanks for hopping over to my blog and becoming a new follower. I love your blog by the way! I'm your newest follower as well =) Thanks!!
ReplyDeleteMy mom used to bake using Bisquick, too, but it seems like it is really just a few simple ingredients--flour, something leaven-y (soda & salt, maybe? or baking powder?). I would imagine you'll be able to figure out a homemade gluten-free version.
ReplyDeleteAs for this recipe? It sounds fabulous, and I have some zucchini in the fridge even as I type. So...maybe this will be on the menu for dinner this week!
Thanks for linking to Food on Fridays!
Quick question-- you show 5 eggs in your picture and use 4 eggs in the recipe. I just made the recipe with 4 eggs and it is much less runny than your picture-- is it possible that you used 5 eggs when you made it? I am sure it will still be good- smells great as it is cooking- just was curious!
ReplyDeleteTHanks!
Hi, glad to have found your blog! I am a gluten free vegetarian too :)
ReplyDeleteAs far as a recipe for gluten free Bisquick, I haven't tried it yet, but I am thinking of making the same recipe as above, except instead of using Bisquick, just use 1 cup of rice flour and add 1 tsp baking soda, 1 Tbl of vinegar, and 1/2 tsp xantham gum (it helps make it rise). Then cut in 2 Tbl vegetable shortening or butter that is your Bisquick substitution :)
This looks positively yummy. I need to make note on my list to get some Zucchini.
ReplyDeleteHi Pattie,
DeleteYou will love this recipe- it's easy and makes a wonderful crunchy quiche
I'm gonna use this one in the zucchini season.
